Lush mocktails & zero proof drinks

When the occasion calls for alcohol-free, make delicious mocktails. Here are some of my favourite mindful drinking recipes. I’ll show you how to take crafting alcohol-free to new social heights.

Simple syrup with deliciously complex flavours

Simple mocktail syrup with a deliciously complex flavour is easy to make. The trick is using equal parts sugar and water as your base. After which, you can add your favourite ingredients to infuse flavour and finesse your drinks.

  • 1 cup sugar
  • 1 cup water

  1. Add sugar and water to a saucepan
  2. Put on low heat and stir until sugar dissolves
  3. Simmer for about 5 minutes
  4. Cool before using

Syrup variations to try at home

  • Lavender syrup – add 1 tablespoon of lavender
  • Basil syrup – add 1 Cup of basil
  • Rosemary syrup – add ¼ cup of rosemary
  • Mint syrup – add 1 cup of mint
  • Ginger syrup – add 4 decent chunks of bashed fresh ginger
  • ‘Rock the kasbah’ syrup – add 2 star anise, 3 crushed cardamom pods and 1 cinnamon stick
  • Lemongrass syrup – bruise the white ends of three lemongrass stalks and add to the sugar and water.

Tabooze Tips

  • When flavouring syrup, let it steep for 30 minutes before pouring it into a sterilised glass bottle.
  • Make sure your syrup is at room temperature before using it in mocktails.

Hand on Heart Fizz

This is a garden party in a glass. Mix this up head into the yard and wriggle your toes in the grass.

  • 45ml Brunswick Aces Heart Sapiir
  • 2 tablespoons of rosemary syrup
  • ¾ cup of sparkling water
  • Ice

  1. Pour your Brunswick Aces Heart Sapiir into a gorgeous glass
  2. Add 2 tablespoons of rosemary syrup and whisk.
  3. Add ice and stir

Tabooze Tip

  • For a touch of glassware glamour, roll the rim in a cane and vanilla bean sugar mix before making the drink.

Let’s Stem Thyme

What’s better than kicking back with friends sipping on a sparkling, fruity, and refreshing alcohol-free cocktail?

  • 45 ml Clovendoe Stem
  • 7-8 blueberries
  • 2 sprigs of thyme
  • 2 Tablespoons of fresh lemon juice
  • ½ cup sparkling mineral water

  1. Mash blueberries with thyme and simple syrup at the bottom of a shaker
  2. Add the lemon juice and ice
  3. Cover and shake for about 10 seconds until the ice breaks into small pieces
  4. Filter and drain in a glass with ice
  5. Adding sparkling water
  6. Add the Clovendoe Stem
  7. Garnish with blueberries and thyme sprigs

Tabooze Tips

  • If you don’t have blueberries, use blackberries, raspberries or strawberries.

House Mulled Wine

Ah, do you remember when we could travel overseas? This Mulled Wine takes me back to snowfields and Christmas’s spent in Europe.

  • 1 bottle (750 mL) of your favourite alcohol-free red wine
  • Zest & juice of one orange
  • 2 cinnamon sticks
  • 4 star anise
  • 4 cloves
  • 6-8 whole allspice
  • ¼ cup sugar of choice

  1. Add all ingredients to a saucepan
  2. Over medium heat, stir until the sugar dissolves
  3. Keep on heat for at least 15 minutes but don’t boil – strain
  4. Serve hot in a double-walled or thick wall glass

Garnish with a slice of dehydrated orange or grapefruit

White Sangria

  • 3 medium oranges or 1 cup of orange juice

  • 1 lemon

  • 1 lime

  • 1 bottle of white wine (we use the Santa Digna Sav Blanc) chilled

  • 2/3 cup sugar (I have used less)

  • 2 cups soda water or ginger ale

  1. Juice the citrus and pour into a jug (or dispenser).
  2. Pour the white wine into the jug and add the sugar. Stir to dissolve.
  3. You can store this in the fridge until you are ready to drink.
  4. Add the soda water or ginger ale just before serving. You can also add some extra citrus wedges to the jug at this stage. Looks great in a dispenser.
  5. Garnish with dehydrated citrus, rosemary or ginger batons.

Chin, chin!

Beautiful pink Paloma cocktail full of citrus goodness

My Paloma

  • 60ml Ovant Grace

  • 30ml Grapefruit Cordial

  • Soda water or tonic

  • 30ml lemon juice

  1. Juice the lemon and pour into a glass.
  2. Measure the grapefruit cordial into the same glass.
  3. Pour Grace over measured citrus.
  4. Top up with the soda water.
  5. Garnish with dehydrated grapefruit and a sprig of thyme.

Cinnamon Syrup

A richer syrup than the simple syrups above. Use this on with the New Fashioned recipe here.

  • 1.5 cups sugar
  • 1 cup water
  • 3 cinnamon quills

  1. Add sugar and water to a saucepan
  2. Put on low heat and stir until sugar dissolves
  3. Add cinnamon quills
  4. Simmer for about 5 minutes
  5. Cool before bottling

Tabooze Tips

  • Remove the cinnamon quills after 12 hours for a milder flavour.
  • Make sure your syrup is at room temperature before using it in mocktails.
Old Fashioned cocktail

The New Fashioned

A smooth, rich & elegantly spicy alcohol free version of an Old Fashioned with a twist.  Use the Cinnamon Syrup recipe here instead of the cue of sugar with bitters.

  • 60ml Ovant Royal
  • 2 tablespoons of cinnamon syrup
  • Juice of half an orange
  • Dry Giner Ale
  • Ice

  1. Build this cocktail in a glass of your choice
  2. Stir everything together
  3. Add ice
  4. Garnish with orange peel and a maraschino cherry (if you like them)

Tabooze Tip

  • Adjust your quantities of Royal and syrup depending on the size of your glass.
  • Play around with proportions until you find the right balance for you. (I have a sweet tooth so add more syrup)
